Automatic Dumpling Wrapping Machine – Automatic Filling and Folding System
- Gyoza is a popular appetizer originating from China during the Ming Dynasty (circa 1644). By 1700, Gyoza gained popularity alongside Ramen in Japan, leading to its wider adoption. In Thailand, it became known through Japanese influence.
- Gyoza wrappers are typically made from wheat flour, eggs, water, salt, and seasoning. They are filled with various ingredients such as pork, shrimp, chicken, or vegetables. Gyoza can be prepared through steaming, boiling in broth, or most commonly, pan-frying or deep-frying.

The dumpling making business is rapidly expanding. This Dumpling Wrapping Machine is an excellent solution, capable of producing 8,000 pieces per hour.

Machine Instructions for Use :
- Equipment Overview
The automatic dumpling molding machine utilizes advanced technology to produce dumplings. Its rolling mechanism creates a smoother texture, comparable to handmade dumplings. The process involves placing dough on a board, after which the machine forms it into a crust roll and subsequently produces finished dumplings. The machine features variable frequency stepless speed control, ensuring stable and adjustable dumpling dough and filling ratios. The entire production process is fully automated and continuous. This machine is characterized by its reasonable structure, ease of cleaning and maintenance, aesthetic design, compact footprint, light weight, high yield, and low energy consumption. Parts are made of stainless steel for hygiene and durability, ensuring delicious end products. The nominal output is 10,000 units per hour.

- Operational Process and Principle
The main frame supports all components. The rolling system comprises multiple sets of rollers, conveyor belts, and powder application devices. Dough sheets are fed into the frame and rolled to the desired thickness by a series of rollers. Adjustments to roller thickness must ensure parallel alignment for uniform and straight rolled surfaces. Once adjusted, the locking nuts secure the settings. Conveyor belts transfer the rolled dough between rollers. During this process, a dusting device applies flour to prevent sticking. Flour quantity should be adjusted based on dough moisture content. The final rolled dough thickness can be customized. Recommended thicknesses: 20g dumplings at 1.5mm, 16g dumplings at 1.4mm, and 12g dumplings at 1.3mm. The inverter-based dough feeding system allows for precise control of motor speed via an electrical inverter to match the rolling requirements. The formed dough sheet is guided into an arc by a guide panel, which can be rotated to correct any deviation before entering the molding unit. A pair of counter-rotating kneading and cutting wheels form the dough into a tube. Simultaneously, edge material is trimmed by a recovery edge device and fed into an edge box. The filling unit is a separate component featuring a filling pump, tube, and decelerating motor, responsible for filling the dough tube with the prepared filling. Filling capacity is regulated by the pump. The motor speed is controlled by an electrical frequency converter to achieve the correct filling-to-dough ratio. The filling tube leads to the molding unit, which includes a pattern, die, four top blocks, two cutting mechanisms (knives), and a brush set. Proper adjustment of the pattern and die ensures correct dumpling formation. The pattern is coated with a non-stick layer for easy release. Top blocks extrude the dumplings from the cavities. Scissors and brushes clean the pattern and finish the dumplings. Brushes require frequent cleaning for optimal performance. The brush shaft and bearing housing can be removed together for cleaning. The operating speed of the molding unit is synchronized with the dough feeding system and controlled by an electrical converter. A deceleration motor adjusts wheel rotational speed. The dough-skin joining and forming units are driven by the same motor for synchronized, continuous, and stable operation.
- Drives and Transmission
The entire system is powered by multiple deceleration motors. The dough feeding system includes multi-track rollers, multi-bar conveyor belts, and multi-set sprinkler units, all driven by a reduction motor with inverter speed control. The shaping and edging unit is driven by a speed-reducing motor with frequency converter speed control. The filler unit is driven by a speed reducer with inverter control. The transmission employs chain gears and round pulley mechanisms to drive functional parts synchronously. Chain installation must be in the vertical plane and tightened with a tensioning wheel or adjustable sprocket seat.
6. Electrical Schematics and Instructions
- The electrical system is housed within the main unit’s electrical cabinet.
- This system incorporates air switch protection for the power supply bus, relay switches for power line control, and fuses for control lines, all indicated by indicator lamps. The forming motor (1M) and filling motor (2M) are equipped with inverter stepless speed control, LED digital displays, and overload, overcurrent, and short-circuit protection via air circuit breakers. Thermal overload protection for the incoming motor (3M) is managed by a breaker switch. Two inverters provide stepless speed adjustment, LED digital display, and comprehensive protection against overload, overcurrent, and short circuits.
- Proper grounding of the equipment is essential after installation.
- Do not touch inverter circuit boards or other components for 5 minutes after shutdown.
- Strictly adhere to the Inverter User Manual and consult it for troubleshooting any faults.
7. Control Panel Diagram
The control box is located in the upper left corner of the frame (near the edge clamping die). The control panel features the following controls: Power On, Total Stop, In. Start, Feed Stop, Feed Speed Control, and an LED digital display.
8. Equipment Operation
- Carefully read this manual before operating the equipment.
- Ensure the equipment is correctly positioned and in normal operating condition before starting.
- Perform an initial test run under no-load conditions: 1) Close the main switch. 2) Close the circuit breaker switch. 3) Press ‘Power On’.
- Verify correct rotation of the rollers in the dough feeding system.
- Turn the ‘Shape’ knob to ‘Open.’ Adjust the ‘Shaping Speed Control’ knob to operate the molding unit. Confirm correct rotation of the molding die. Set the initial molding speed on the LED digital display to approximately 5 Hz.
- Turn the ‘Filling’ knob to ‘Open’ and adjust the ‘Filling Speed Control’ knob to operate the filling pump. The winch rotation should be counterclockwise when viewed from above.
- To stop a specific function, press the corresponding ‘Stop’ button.
- In case of an emergency, press the mushroom head ‘Emergency Stop’ button immediately. This will shut down all units. 4. Verify the correct direction of rotation for each motor after each power reconnection.
- Lubrication
Use edible vegetable oils or food-grade machinery grease (GB151791992) for lubrication. Open the sealing plates and apply lubricant to gears, sprockets, and chains using a small brush. Avoid excessive dripping to prevent contamination of the product. Replace seals after lubrication. Lubrication should be performed monthly for oil and grease.
10. Safety Precautions
- Keep hands clear of rollers, molds, and filling pumps during operation to prevent personal injury.
- Do not introduce any foreign objects into the rollers, molds, or filling pumps, as this may cause equipment damage or accidents.
- Turn off the power supply and shut down the equipment when operators leave their workstations or at the end of a shift.
- Ensure all equipment seals are securely fastened to prevent potential injury.
- Do not spray the equipment with water to avoid short circuit accidents.
